Small-Batch Cast Iron Parmesan Focaccia

For the Focaccia

  • 250 g (about 2 cups) all-purpose flour
  • 225 g (about 3/4 cup + 2 tbsp) lukewarm water
  • 5 g (1 1/2 tsp) instant yeast
  • 5 g (about 3/4 tsp) salt
  • 1 tsp honey
  • 3 tbsp extra-virgin olive oil, divided
  • 1 tbsp unsalted butter, for the pan
  • 1/2 cup finely grated Parmesan cheese, divided
  • 1 tbsp fresh rosemary, finely chopped
  • 1/2 tsp garlic powder
  • Flaky sea salt, for topping

Instructions

Step 1: Combine the Dry Ingredients

Add the all-purpose flour, instant yeast, and salt to a large mixing bowl.

Stir or whisk until evenly combined.

This helps distribute the yeast and salt throughout the flour before the liquid ingredients are added.

Step 2: Add the Water and Honey

Pour in the lukewarm water and add the honey.

Use a wooden spoon or sturdy spatula to stir everything together.

Continue mixing until no large pockets of dry flour remain and a soft, very sticky dough forms.

The dough will look much wetter than traditional bread dough.

Do not add extra flour simply to make it easier to handle.

Step 3: Add the First Tablespoon of Olive Oil

Drizzle 1 tablespoon extra-virgin olive oil over the dough.

Gently turn the dough several times to lightly coat its surface with oil.

There is no kneading required.

Step 4: Let the Dough Rise

Cover the bowl with plastic wrap or a clean kitchen towel.

Place it in a warm, draft-free location.

Let the dough rise for approximately 2 to 3 hours.

By the end of the first rise, it should look noticeably expanded, puffy, and bubbly.

The exact rising time can vary depending on room temperature, so pay attention to the appearance of the dough rather than relying entirely on the clock.
