Bread
- 1 cup cottage cheese
- 2 large eggs
- 1 1/2 cups all-purpose flour, spooned and leveled
- 2 teaspoons baking powder
- 1 cup freshly shredded sharp cheddar cheese, about 3.5 ounces
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt, or less to taste
- 1 tablespoon chopped chives, optional
Optional topping
- 1 teaspoon sesame seeds or everything bagel seasoning
Instructions
- Preheat the oven to 350°F. Line an 8 × 4-inch loaf pan with parchment and grease the exposed ends.
- Blend the cottage cheese and eggs until smooth.
- Whisk the flour, baking powder, garlic powder, onion powder, Italian seasoning, pepper, and salt in a large bowl.
- Fold in the blended mixture until no dry flour remains. Fold in the cheddar and optional chives. The batter will be thick and sticky; do not knead.
- Transfer to the pan and smooth gently. Sprinkle with optional sesame seeds or everything bagel seasoning.
- Bake for 35–45 minutes, or longer if needed, until the center is set and a toothpick comes out without wet batter. Tent with foil if the top browns early.
- Cool in the pan for 10 minutes, then transfer to a rack for at least 20 more minutes before slicing.
Storage: Refrigerate cooled bread in an airtight container for up to 4 days or freeze separated slices for up to 2 months. Toast to serve.
