- 2 teaspoons baking powder
- ½ teaspoon fine salt
Optional Flavor Additions

- ½ teaspoon onion powder
- 1 tablespoon chopped fresh chives
- A small extra sprinkle of cheddar for the top
- Oil or butter for greasing the pan, if not using parchment
Instructions
- Heat oven to 350°F. Grease or line an 8½-by-4½-inch loaf pan.
- Whisk cottage cheese and eggs together, or blend them for a smoother texture.
- Separately whisk flour, baking powder, salt, and optional powdered seasonings.
- Stir dry mixture into wet just until combined. Fold in cheddar and optional chives.
- Spoon into the pan and level. Add a little extra cheddar if desired.
- Bake 35–45 minutes until golden and set, with no wet batter on a central toothpick check. Continue in short increments if needed and shield a dark top with foil.
- Rest 10 minutes in the pan, then cool on a rack before slicing. Refrigerate within 2 hours of baking.
