Ingredients
- 1 1/2 lbs lean ground beef
- 1 medium green cabbage, chopped into bite-size pieces
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (15 oz) tomato sauce
- 2 tbsp tomato paste
- 1 cup low-sodium beef broth
- 1 cup uncooked long-grain white rice
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1/2 tsp dried thyme
- 1/2 tsp black pepper
- 1 1/2 tsp kosher salt
- 1 tbsp brown sugar, optional
- 1/2 tsp red pepper flakes, optional
- 1 tbsp fresh parsley, chopped
Instructions
Step 1: Brown the Ground Beef
Heat a large skillet over medium-high heat.
Add 1 1/2 pounds lean ground beef.
Cook for approximately 6β8 minutes, breaking the meat into small crumbles as it browns.
Continue cooking until no pink remains.
Drain away excess grease if necessary.
Why Brown the Beef First?
It might be tempting to put raw ground beef directly into the crockpot, but browning it first gives this casserole a better texture.
Browning also develops additional savory flavor through direct high-heat cooking.
It only adds a few minutes to the preparation and is worth doing.
Step 2: Add the Onion and Garlic
Add the diced yellow onion to the browned beef.
Cook for 2β3 minutes, or until it begins to soften.
Add the minced garlic near the end and stir until fragrant.
Avoid cooking the garlic too long because it will continue cooking in the slow cooker.
Step 3: Prepare the Slow Cooker
Lightly grease a 6-quart slow cooker.
Place approximately half of the chopped cabbage across the bottom.
The cabbage may look bulky now, but it will shrink considerably.
Step 4: Add the Beef
Spoon the browned beef, onion, and garlic mixture over the cabbage.
Spread it relatively evenly.
Step 5: Add the Rice π
Sprinkle 1 cup uncooked long-grain white rice evenly over the mixture.
Avoid dumping all the rice into one concentrated pile.
Even distribution helps it cook more consistently.
Step 6: Add the Remaining Cabbage
Add the rest of the chopped green cabbage.
Step 7: Add the Tomatoes and Sauce π
Pour in:
- 1 can diced tomatoes with their liquid
- 1 can tomato sauce
- 2 tablespoons tomato paste
- 1 cup low-sodium beef broth
- 1 tablespoon Worcestershire sauce
Step 8: Add the Seasonings
Add:
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons kosher salt
- 1 tablespoon brown sugar, if using
- 1/2 teaspoon red pepper flakes, if using
Step 9: Stir Everything Together
Gently mix everything as evenly as possible.
Pay particular attention to the rice.
You don’t want a thick pocket of dry rice sitting above the liquid because those grains may not cook evenly.
The rice should be distributed throughout the moist tomato mixture.
The Most Important Part: Make Sure the Rice Has Enough Liquid
Rice absorbs a substantial amount of moisture as it cooks.
That’s why this recipe includes:
- Liquid from the diced tomatoes
- Tomato sauce
- Beef broth
Slow cookers also retain moisture more efficiently than uncovered stovetop cooking.
However, different brands of rice and different slow cookers can behave somewhat differently.
If the casserole begins looking dry while the rice is still firm, add a small splash of warm beef broth.
Don’t pour in a large amount immediately.
You can always add more liquid, but removing excess liquid from a finished casserole is harder.
Step 10: Slow Cook
Cover the crockpot.
Cook on:
LOW for 5β6 hours
or
HIGH for approximately 2 1/2β3 1/2 hours
The casserole is ready when:
- The cabbage is tender.
- The rice is fully cooked.
- The beef mixture is hot throughout.
- The tomato sauce has thickened around the ingredients.
Slow cookers vary, so begin checking toward the earlier end of the cooking window.
Step 11: Check During the Final 30 Minutes
If possible, stir the casserole during the final 30 minutes.
Check the rice.
If it’s still slightly firm and the casserole appears dry, stir in a small splash of beef broth.
Cover and continue cooking.
Step 12: Let It Rest
Once the rice and cabbage are tender, turn off the slow cooker.
Remove the lid and let the casserole rest for approximately 10 minutes.
This allows excess steam to escape and gives the rice time to absorb a little more of the surrounding sauce.
Step 13: Finish with Parsley πΏ
Stir in 1 tablespoon chopped fresh parsley.
Taste and adjust seasoning if necessary.
Step 14: Serve
Spoon the cabbage roll casserole into bowls or onto plates.
Serve warm.
