- 2 boneless, skinless chicken breasts
- 8 oz pasta (penne or fettuccine)
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the Pasta: Begin by boiling water in a large pot. Season it with salt and add your pasta. Cook according to package instructions until al dente, then drain and set aside.
- Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken with salt and pepper, then place it into the skillet. Brown for about 6-7 minutes per side, until cooked through. Slice into strips.
- Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for about 2 minutes until fragrant.
- Pour in the heavy cream and bring to a gentle simmer. Let it bubble for a minute, then add fresh spinach until wilted.
- Combine the pasta and sliced chicken. Toss everything together with grated Parmesan cheese.
- Serve while warm and garnish with extra Parmesan and black pepper.
