Description

A creamy, flavorful dish featuring tender chicken, sun-dried tomatoes, and fresh spinach, all served over pasta.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or fettuccine)
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Begin by boiling water in a large pot. Season it with salt and add your pasta. Cook according to package instructions until al dente, then drain and set aside.
  2. Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken with salt and pepper, then place it into the skillet. Brown for about 6-7 minutes per side, until cooked through. Slice into strips.
  3. Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and chopped sun-dried tomatoes. Sauté for about 2 minutes until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer. Let it bubble for a minute, then add fresh spinach until wilted.
  5. Combine the pasta and sliced chicken. Toss everything together with grated Parmesan cheese.
  6. Serve while warm and garnish with extra Parmesan and black pepper.
