Ingredients

- 4 Crispy Tortillas
- 1 lb Taco Meat (ground beef, turkey, or plant-based)
- 1 can Refried Beans
- 1 cup Enchilada Sauce
- 2 cups Cheese (cheddar and Monterey Jack blend)
Instructions
- Preheat your oven to 400°F (200°C).
- Spread a generous layer of refried beans on a crispy tortilla.
- Add the seasoned taco meat evenly on top of the beans.
- Drizzle enchilada sauce over the meat.
- Place another crispy tortilla on top.
- Sprinkle cheese over the top tortilla.
- Bake in the oven for 10-15 minutes until the cheese bubbles.
- Carefully remove from the oven, let it cool for a minute, then slice and serve.
Notes
Make the taco meat and refried beans a day in advance to save time. Use non-stick spray if opting out of parchment paper.
