- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 cup mashed sweet potatoes
- 1/2 cup milk
- 1/2 cup butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 425°F (220°C).
- Whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 cup of sugar in a large mixing bowl.
- Combine in another bowl 1 cup of mashed sweet potatoes, 1/2 cup of milk, 1/2 cup of melted butter, and 1 teaspoon of vanilla extract.
- Fold the wet mixture into the dry ingredients gently until just combined.
- Prepare a greased baking dish or cast iron skillet and pour the dough into it, spreading it evenly.
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Cool slightly before serving.
