Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 cup mashed sweet potatoes
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/2 teaspoon of salt, and 1/4 cup of sugar in a large mixing bowl.
  3. Combine in another bowl 1 cup of mashed sweet potatoes, 1/2 cup of milk, 1/2 cup of melted butter, and 1 teaspoon of vanilla extract.
  4. Fold the wet mixture into the dry ingredients gently until just combined.
  5. Prepare a greased baking dish or cast iron skillet and pour the dough into it, spreading it evenly.
  6. Bake in the preheated oven for 20-25 minutes until golden brown.
  7. Cool slightly before serving.

Notes
