A vibrant salad featuring tender chicken, crunchy vegetables, and nutty sunflower seeds, all enveloped in a creamy dressing.

Ingredients

Scale
  • 2 cups cooked chicken, chopped
  • 1 cup broccoli florets, steamed
  • 1/2 cup sunflower seeds
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup red onion, diced
  • 1/2 cup sunflower seed butter
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped chicken, steamed broccoli florets, sunflower seeds, diced bell peppers, and red onion. Mix these fresh ingredients gently until they’re beautifully combined.
  2. In a separate small bowl, whisk together the sunflower seed butter, honey or maple syrup, apple cider vinegar, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the salad mixture, gently tossing everything together until each bite is coated perfectly.
  4. Taste and adjust seasoning as necessary, serving immediately or refrigerating for about 30 minutes for a chilled delight.
