Instructions
- Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Cream together the softened butter and sugar until light and fluffy, about 4-5 minutes.
- Add the eggs one at a time, mixing well after each addition and then stir in the vanilla extract.
- Sift the flour, baking powder, and salt together in another bowl.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
- Fold in the pureed strawberries gently to maintain the fluffiness.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
- Beat the softened butter for the buttercream until creamy, gradually adding powdered sugar and milk until smooth, then stir in the vanilla.
- Frost the top of one cooled cake with buttercream and strawberry puree, then place the second cake on top and frost the sides and top of the cake.
- Decorate with fresh berries before slicing and serving.
Notes
Make the cakes a day in advance for better flavor and easier decorating. Store leftovers in an airtight container.
