Description

Delight in this light and moist Strawberry Vanilla Cake layered with creamy buttercream and fresh strawberries, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 cups fresh strawberries, pureed
  • 1 cup unsalted butter (for buttercream)
  • 4 cups powdered sugar (for buttercream)
  • 1/4 cup milk (for buttercream)
  • 1 teaspoon vanilla extract (for buttercream)
  • Fresh berries for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy, about 4-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition and then stir in the vanilla extract.
  4. Sift the flour, baking powder, and salt together in another bowl.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, mixing until just combined.
  6. Fold in the pureed strawberries gently to maintain the fluffiness.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  9. Cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.
  10. Beat the softened butter for the buttercream until creamy, gradually adding powdered sugar and milk until smooth, then stir in the vanilla.
  11. Frost the top of one cooled cake with buttercream and strawberry puree, then place the second cake on top and frost the sides and top of the cake.
  12. Decorate with fresh berries before slicing and serving.

Notes

Make the cakes a day in advance for better flavor and easier decorating. Store leftovers in an airtight container.
