- 2 cups sourdough starter
- 2 cups all-purpose flour
- 1 cup potato, peeled and cut into chunks
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup warm water
- 1 tablespoon olive oil
- 1 teaspoon instant yeast (optional, for faster rise)
Instructions
- Combine the sourdough starter with warm water and sugar in a large bowl. Let this mix sit for about 10 minutes to activate the cultures.
- Add the flour and salt gradually, mixing until the dough starts to come together. If using instant yeast, sprinkle it in during this step.
- Fold in the potato chunks until combined.
- Flour your work surface and knead the dough for about 10 minutes until smooth and elastic.
- Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for 4-8 hours, or until doubled in size.
- Preheat your oven to 450°F (230°C) as the dough nears the end of its rising time.
- Shape the dough into a loaf and place it in a greased loaf pan; let it rise again for about an hour.
- Bake for 30-35 minutes until golden brown and hollow sounding when tapped on the bottom.
- Cool on a wire rack before slicing.
Notes
Allow the sourdough starter to rest a few days before use for deeper flavor. You can also experiment with adding herbs or cheese for flavor variations.
