Description

A comforting and versatile bread filled with tender potato chunks, perfect for any occasion.

Ingredients

Scale
  • 2 cups sourdough starter
  • 2 cups all-purpose flour
  • 1 cup potato, peeled and cut into chunks
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup warm water
  • 1 tablespoon olive oil
  • 1 teaspoon instant yeast (optional, for faster rise)

Instructions

  1. Combine the sourdough starter with warm water and sugar in a large bowl. Let this mix sit for about 10 minutes to activate the cultures.
  2. Add the flour and salt gradually, mixing until the dough starts to come together. If using instant yeast, sprinkle it in during this step.
  3. Fold in the potato chunks until combined.
  4. Flour your work surface and knead the dough for about 10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm area for 4-8 hours, or until doubled in size.
  6. Preheat your oven to 450°F (230°C) as the dough nears the end of its rising time.
  7. Shape the dough into a loaf and place it in a greased loaf pan; let it rise again for about an hour.
  8. Bake for 30-35 minutes until golden brown and hollow sounding when tapped on the bottom.
  9. Cool on a wire rack before slicing.

Notes

Allow the sourdough starter to rest a few days before use for deeper flavor. You can also experiment with adding herbs or cheese for flavor variations.
