Sopa de Fideo with Chorizo, Potatoes & Pinto Beans

  • 8 oz Mexican chorizo, casings removed
  • 1 tbsp olive oil, if needed
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 medium Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
  • 2 cups cooked pinto beans, or 1 can (15 oz), drained and rinsed
  • 7 oz fideo noodles or broken thin vermicelli
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 6 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp Mexican oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 bay leaf
  • 1 tsp kosher salt, or to taste
  • 1/2 tsp black pepper
  • 1 cup corn, fresh or frozen
  • 1 tbsp fresh lime juice
  • 2 tbsp chopped fresh cilantro

  • Diced white onion
  • Sliced avocado
  • Sliced jalapeño
  • Crumbled queso fresco
  • Lime wedges
  • Warm corn tortillas

Instructions

Step 1: Brown the Chorizo

Heat a large Dutch oven or heavy soup pot over medium heat.

Add 8 ounces Mexican chorizo.

Cook for approximately 5–7 minutes, breaking it into small crumbles with a wooden spoon.

Continue cooking until the chorizo is browned and fully cooked.

If the pot seems dry, add a little olive oil.

If the chorizo releases excessive grease, carefully spoon some out.

You want enough fat left in the pot to flavor the onion and toast the noodles without making the finished soup greasy.

Step 2: Sauté the Onion

Add the diced yellow onion directly to the chorizo.

Cook for approximately 3–4 minutes, stirring occasionally.

The onion should begin to soften and absorb the flavorful chorizo drippings.

Step 3: Add the Garlic

Stir in the minced garlic.

Cook for another 30 seconds, just until fragrant.

Avoid letting the garlic burn.

Step 4: Toast the Fideo

Add the 7 ounces fideo noodles directly to the pot.

Cook for approximately 2–3 minutes, stirring frequently.

The noodles should begin developing a light golden color.

Watch carefully because thin pasta can go from toasted to burned quickly.

Why Toast Fideo Noodles?

This small step makes a big difference.

Toasting the dry noodles in the flavorful fat gives them a slightly nutty, savory quality before they absorb the broth.

It also gives the finished soup that distinctive toasted-pasta character associated with sopa de fideo.

Don’t aim for dark brown noodles.

A light golden color is enough.

Step 5: Add the Tomato Paste and Spices

Stir in:

  • 2 tablespoons tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon Mexican oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Cook for approximately 30 seconds, stirring constantly.

This briefly toasts the spices and cooks the tomato paste before the liquid goes into the pot.

Step 6: Build the Broth

Add:

  • 1 can diced tomatoes with juices
  • 6 cups low-sodium chicken broth
  • 3 cubed Yukon Gold potatoes
  • 1 bay leaf

Stir thoroughly.

Scrape the bottom of the pot to loosen any flavorful browned bits.

Step 7: Simmer

Bring the soup to a gentle boil.

Reduce the heat and maintain a steady simmer.

Cook for approximately 12–15 minutes, stirring occasionally.

The potatoes should be approaching fork-tender.

Because the fideo is already in the pot, avoid unnecessarily extending this stage once the potatoes are nearly done.

Step 8: Add the Pinto Beans and Corn

Stir in:

  • 2 cups cooked pinto beans
  • 1 cup fresh or frozen corn

Simmer for another 5–7 minutes.

The potatoes should become completely tender, the beans should be heated through, and the fideo should be cooked.

Step 9: Remove the Bay Leaf

Find and discard the bay leaf.

Step 10: Add Lime and Cilantro

Stir in:

  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped cilantro

Taste the broth.

Adjust the salt, pepper, chile seasoning, or lime as needed.

Step 11: Serve Immediately

Ladle the hot sopa de fideo into bowls while the noodles are tender and the broth is plentiful.

Top with:

  • Cilantro
  • Diced white onion
  • Avocado
  • Jalapeño
  • Queso fresco
  • Fresh lime

Serve with warm corn tortillas.
