Instructions
- Combine ingredients: In a bowl, mix together the sourdough discard, flour, salt, sugar, warm water, and yeast until a dough forms.
- Knead the dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
- Let it rise: Form the kneaded dough into a ball, cover it, and let it rest for about 1 hour, or until it doubles in size.
- Preheat your oven: Set your oven to 450°F (232°C).
- Shape the bites: Divide the risen dough into small balls, shaping them into bites of about 1-inch rounds.
- Prepare the baking soda bath: In a pot, dissolve the baking soda in boiling water.
- Dip and drain: Dip each pretzel bite in the boiling baking soda solution for 30 seconds and let excess water drip off.
- Sprinkle and bake: Arrange the pretzel bites on a parchment-lined baking sheet and sprinkle with coarse salt. Bake for 12-15 minutes until golden brown.
