- 2 cups pineapple chunks (fresh or canned in juice)
- 1/2 cup packed brown sugar
- 1/3 cup soy sauce (low sodium preferred)

- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
Instructions
- Combine the chicken thighs, pineapple chunks, brown sugar, soy sauce, sliced onion, minced garlic, and grated ginger in your slow cooker.
- Stir everything gently to coat the chicken evenly in the sauce.
- Cover your slow cooker and set it to low. Cook for 6-8 hours or high for 3-4 hours.
- Serve the chicken over rice or alongside steamed vegetables.
