- 1.5 lbs boneless, skinless chicken thighs
- 1 cup pineapple chunks (canned or fresh)
- 1 cup bell peppers (sliced)
- 1 onion (sliced)
- 1 cup soy sauce
- 1/2 cup sugar
- 1/2 cup vinegar (rice vinegar or white vinegar)
- 1 tablespoon garlic (minced)
- 1 tablespoon ginger (minced)
- 1 tablespoon cornstarch (optional for thickening)
- Salt and pepper to taste
Instructions
- Combine the chicken thighs, pineapple chunks, bell peppers, and onion in your slow cooker.
- Pour in soy sauce, followed by sugar and vinegar. Add garlic and ginger, stirring to coat.
- Cover and set the slow cooker on low for 6-7 hours or high for 3-4 hours.
- If a thicker sauce is desired, mix cornstarch with water and add in the last 30 minutes of cooking.
- Taste and season with salt and pepper before serving.
- Serve hot over rice or noodles.
