Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple chunks (canned or fresh)
  • 1 cup bell peppers (sliced)
  • 1 onion (sliced)
  • 1 cup soy sauce
  • 1/2 cup sugar
  • 1/2 cup vinegar (rice vinegar or white vinegar)
  • 1 tablespoon garlic (minced)
  • 1 tablespoon ginger (minced)
  • 1 tablespoon cornstarch (optional for thickening)
  • Salt and pepper to taste

Instructions

  1. Combine the chicken thighs, pineapple chunks, bell peppers, and onion in your slow cooker.
  2. Pour in soy sauce, followed by sugar and vinegar. Add garlic and ginger, stirring to coat.
  3. Cover and set the slow cooker on low for 6-7 hours or high for 3-4 hours.
  4. If a thicker sauce is desired, mix cornstarch with water and add in the last 30 minutes of cooking.
  5. Taste and season with salt and pepper before serving.
  6. Serve hot over rice or noodles.
