- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 bell pepper, diced
- 1 red onion, diced
- 1 cup corn (frozen or canned)
- 12 small tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- Toppings: Lettuce, tomatoes, avocado, sour cream, salsa
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the ground meat and taco seasoning in a large bowl.
- Spread the mixture onto a sheet pan evenly.
- Bake for 10 minutes.
- Add bell pepper, onion, and corn; stir well.
- Bake for another 10 minutes until the vegetables are tender.
- Warm the tortillas in a separate pan.
- Remove from the oven and sprinkle cheese on top. Let it melt.
- Serve the mixture on tortillas with desired toppings.
