Ingredients

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup corn (frozen or canned)
  • 12 small tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Toppings: Lettuce, tomatoes, avocado, sour cream, salsa

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground meat and taco seasoning in a large bowl.
  3. Spread the mixture onto a sheet pan evenly.
  4. Bake for 10 minutes.
  5. Add bell pepper, onion, and corn; stir well.
  6. Bake for another 10 minutes until the vegetables are tender.
  7. Warm the tortillas in a separate pan.
  8. Remove from the oven and sprinkle cheese on top. Let it melt.
  9. Serve the mixture on tortillas with desired toppings.
