Ingredients

- 2 cups cooked rice, cold or day-old
- 1 cup cooked chicken, shredded
- 2 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, bell peppers, etc.)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 green onion, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Mix together the cooked rice, shredded chicken, mixed vegetables, and chopped green onion in a large bowl.
- Scramble the beaten eggs until light and fluffy, then fold them into the rice mixture.
- Drizzle the soy sauce and sesame oil over the mixture and toss to coat.
- Spread the mixture evenly on a sheet pan in a single layer.
- Bake for 15 minutes, stirring halfway through.
- Season with salt and pepper to taste before serving.
Notes
Use day-old rice for best texture. You can prepare the mixture a day in advance and bake just before serving.
