Description

Ingredients

  • 2 cups cooked rice, cold or day-old
  • 1 cup cooked chicken, shredded
  • 2 eggs, beaten
  • 1 cup mixed vegetables (peas, carrots, bell peppers, etc.)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the cooked rice, shredded chicken, mixed vegetables, and chopped green onion in a large bowl.
  3. Scramble the beaten eggs until light and fluffy, then fold them into the rice mixture.
  4. Drizzle the soy sauce and sesame oil over the mixture and toss to coat.
  5. Spread the mixture evenly on a sheet pan in a single layer.
  6. Bake for 15 minutes, stirring halfway through.
  7. Season with salt and pepper to taste before serving.

Notes

Use day-old rice for best texture. You can prepare the mixture a day in advance and bake just before serving.
