A vibrant and refreshing Seafood Pasta Salad perfect for any occasion, featuring shrimp, colorful vegetables, and a creamy dressing.
Ingredients
Scale
- 8 oz pasta (such as rotini or fusilli)
- 1 lb shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain well and let it cool completely.
- Prepare the Shrimp: In a separate large pot of boiling water, add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Drain and cool before adding them to the salad.
- Combine Vegetables: In a large bowl, mix the cooled pasta, shrimp, cherry tomatoes, cucumber, red bell pepper, and red onion.
- Make the Dressing: In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, garlic powder, salt, and pepper until smooth.
- Combine and Toss: Pour the dressing over the pasta salad. Use tongs or a large spoon to gently toss the salad, ensuring every ingredient is well coated.
- Garnish and Chill: Sprinkle the salad with freshly chopped parsley. Cover and refrigerate for at least 30 minutes before serving.
Notes
This pasta salad is perfect for meal prep; assemble everything except the dressing a day in advance and add it before serving. Avoid sogginess by cooling your ingredients before mixing.
