Ingredients

  • 8 slices baguette
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes, halved
  • 1 teaspoon balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 clove garlic, minced
  • 1 tablespoon fresh basil, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the halved cherry tomatoes on a baking sheet. Drizzle with one tablespoon of olive oil, balsamic vinegar, salt, and black pepper.
  3. Roast the tomatoes for 15 to 20 minutes, or until they soften and begin to caramelize.
  4. Brush both sides of the baguette slices with the remaining olive oil.
  5. Toast the bread in the oven for 5 to 7 minutes until golden-brown.
  6. Combine the ricotta cheese and minced garlic in a mixing bowl. Season with a pinch of salt and pepper.
  7. Spoon the ricotta mixture generously over each baguette slice.
  8. Top with the roasted tomatoes and drizzle some pan juices over them.
  9. Garnish with freshly chopped basil. Serve immediately.
