- 8 slices baguette
- 2 tablespoons olive oil
- 2 cups cherry tomatoes, halved
- 1 teaspoon balsamic vinegar
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup ricotta cheese
- 1 clove garlic, minced
- 1 tablespoon fresh basil, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Arrange the halved cherry tomatoes on a baking sheet. Drizzle with one tablespoon of olive oil, balsamic vinegar, salt, and black pepper.
- Roast the tomatoes for 15 to 20 minutes, or until they soften and begin to caramelize.
- Brush both sides of the baguette slices with the remaining olive oil.
- Toast the bread in the oven for 5 to 7 minutes until golden-brown.
- Combine the ricotta cheese and minced garlic in a mixing bowl. Season with a pinch of salt and pepper.
- Spoon the ricotta mixture generously over each baguette slice.
- Top with the roasted tomatoes and drizzle some pan juices over them.
- Garnish with freshly chopped basil. Serve immediately.

Use fresh ingredients for the best flavor. This recipe allows for substitutions, such as using goat cheese instead of ricotta.
