Ingredients
Scale
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup toasted pecans, chopped
- 1 cup sweet shredded coconut
Instructions
- Preheat your oven to 350°F (175°C).
- Cream butter and sugars together until smooth and fluffy, about 2-3 minutes.
- Incorporate the eggs one at a time, mixing thoroughly after each addition, then stir in vanilla extract.
- Blend the dry ingredients (flour, baking soda, salt) in a separate bowl and gradually add to the butter mixture until just combined.
- Add chopped pecans and shredded coconut, folding them into the dough evenly.
- Scoop rounded tablespoons of dough onto ungreased baking sheets, leaving space for spreading.
- Bake for 10-12 minutes or until edges are golden brown, while centers remain soft.
- Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. For a nut-free version, use sunflower seeds or pumpkin seeds instead of pecans.
