Overnight No-Knead Sandwich Loaf

  • Author: Luna

Ingredients

Scale

Here’s everything that goes into this soft overnight sandwich loaf and why each ingredient matters.

  • 3 cups all-purpose flour — Provides the structure of the loaf while keeping the interior soft and tender.
  • 1 ¼ cups warm milk — Hydrates the flour while adding richness and contributing to the soft sandwich-bread texture.
  • 2 ¼ tsp instant yeast — Provides the leavening that allows the dough to expand during its long overnight rise.
  • 2 tbsp honey or sugar — Adds mild sweetness and complements the rich milk and butter flavors.
  • 1 ½ tsp salt — Enhances the overall flavor and balances the slight sweetness.
  • 2 tbsp melted butter — Adds richness and helps create a tender crumb.
  • 1 large egg — Contributes richness, structure, and softness to the finished bread.
  • 1 tbsp olive oil — Adds moisture and helps keep the loaf tender.

Instructions

The beauty of this recipe is how little hands-on work it requires. Mix the dough in the evening and let it rise overnight before baking it the following morning.

Step 1: Start the Yeast Mixture

In a large mixing bowl, combine the warm milk, honey or sugar, and instant yeast.

Let the mixture sit for about 5 minutes.

The milk should be pleasantly warm rather than hot.

Step 2: Add the Egg, Butter, and Oil

Add the large egg, melted butter, and olive oil.

Stir until the wet ingredients are thoroughly combined.

Step 3: Make the Dough

Add the all-purpose flour and salt.

Using a wooden spoon or sturdy spatula, stir until a soft and sticky dough forms.

There’s no need to knead the dough. Its soft, sticky consistency is expected for this recipe.

Step 4: Let the Dough Rise Overnight

Cover the bowl tightly with plastic wrap or a clean kitchen towel.

Leave the dough at room temperature overnight for approximately 8–12 hours.

By morning, it should look puffy and have nearly doubled in size.

Step 5: Transfer to the Loaf Pan

Lightly grease a 9×5-inch loaf pan.

Gently transfer the risen dough into the prepared pan.

Use lightly oiled hands or a spatula to smooth the surface without aggressively pressing or deflating the dough.

Step 6: Give the Dough a Second Rise

Loosely cover the loaf pan and allow the dough to rest for another 30–45 minutes.

Meanwhile, preheat your oven to 350°F (175°C).

Step 7: Bake the Sandwich Loaf

Place the loaf pan into the preheated oven.

Bake for 30–35 minutes, or until the bread develops a beautiful golden-brown exterior and sounds hollow when lightly tapped.

Step 8: Brush with Butter

Remove the bread from the oven.

While the loaf is still warm, lightly brush the top with melted butter.

This adds extra flavor while helping maintain a soft sandwich-style crust.

Step 9: Cool the Bread

Allow the bread to cool inside the pan for about 10 minutes.

Carefully remove the loaf and transfer it to a wire cooling rack.

Let it cool completely before slicing.
