Description
A comforting dish with a vibrant kick, featuring ground beef, rice, colorful bell peppers, and a creamy cheesy sauce, all cooked in one pot for a delightful meal.
Ingredients
Scale
- 1 pound ground beef
- 1 cup rice (white or brown)
- 1 tablespoon Cajun seasoning
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cups beef broth
- 1 cup shredded cheese (cheddar or a blend)
- 1/2 cup mayonnaise
- 1 tablespoon hot sauce (optional)
- Salt and pepper to taste
Instructions
- In a large pot, place the ground beef over medium heat. Brown the beef thoroughly, breaking it apart until it’s no longer pink.
- Add the diced red and green bell peppers to the pot. Sauté for about 3-4 minutes, allowing them to soften.
- Stir in the Cajun seasoning and rice. Let the spices coat the mixture and bloom for a minute.
- Pour in the beef broth, stirring well. Bring to a boil, then reduce the heat to simmer. Cover and cook for 15-20 minutes or until the rice is tender.
- Once cooked, take off heat and mix in the shredded cheese until it melts into a creamy layer.
- In a small bowl, combine mayonnaise and hot sauce. Drizzle this over the finished dish before serving.
Notes
Make-ahead tips: Refrigerate the beef mixture (without cheese) for up to three days. For lighter options, consider using ground turkey or adding extra vegetables.
