Description

Delightful mini meatloaf muffins that are perfect for sharing, packed with savory flavors and topped with a glossy ketchup layer.


Ingredients

  • 1 lb ground beef
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup ketchup
  • 1 egg
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat oven to 350°F (175°C) and grease the muffin tin.
  2. Combine ground beef, gluten-free breadcrumbs, Parmesan cheese, ketchup, egg, onion, garlic, salt, pepper, and Italian seasoning in a large mixing bowl.
  3. Spoon generous amounts of the mixture into the muffin cups, filling them about 3/4 full.
  4. Bake for 20-25 minutes until the internal temperature reaches 160°F (70°C).
  5. Cool slightly before removing from the tin and serving warm.
