Ingredients
For the Soup
- 1 lb lean ground beef
- 1 tbsp vegetable oil or olive oil, divided as needed
- 7 oz fideo noodles or vermicelli, broken into short pieces
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 medium russet or Yukon Gold potatoes, peeled and diced into 1/2-inch cubes
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 6 cups low-sodium beef broth
- 1 tsp ground cumin
- 1 tsp Mexican oregano
- 1 tsp chili powder
- 1/2 tsp smoked or regular paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1–1 1/2 tsp salt, or to taste
- 1 small jalapeño, finely diced, optional
- 1/2 cup chopped fresh cilantro
- 1 tbsp fresh lime juice
For Serving
- Fresh cilantro
- Lime wedges
- Diced avocado
- Crumbled queso fresco
- Sliced jalapeños
- Warm corn or flour tortillas
- Mexican crema, optional
Instructions
Step 1: Brown the Ground Beef 🥩
Heat a large Dutch oven or soup pot over medium-high heat.
Add the ground beef.
Cook for approximately 5–7 minutes, breaking it into small crumbles with a wooden spoon.
Continue cooking until the beef is nicely browned and no longer pink.
If there is a large amount of excess grease, carefully drain most of it while leaving a small amount in the pot for flavor.
Transfer the browned beef to a plate temporarily.
Step 2: Toast the Fideo
Add enough oil to the pot to lightly coat the bottom if necessary.
Add the fideo noodles.
Cook over medium heat for approximately 2–4 minutes, stirring frequently.
The noodles should gradually change from pale yellow to a light golden brown.
Watch them carefully.
Because fideo is thin, it can go from toasted to burned very quickly.
Once golden, transfer the noodles to a plate or push them aside temporarily if your pot is large enough.
Why Toast the Fideo?
This small step makes a noticeable difference.
Rather than simply dropping dry pasta into broth, traditional-style fideo preparation begins by lightly browning the noodles in oil.
Toasting develops a deeper flavor and gives the finished sopa its characteristic savory, slightly nutty quality.
Aim for golden brown, not dark brown.
Step 3: Sauté the Onion and Jalapeño
Add the diced onion to the pot.
If using jalapeño, add it now.
Cook for approximately 3–4 minutes, stirring occasionally, until the onion begins to soften.
Add the minced garlic.
Cook for another 30 seconds, just until fragrant.
Avoid browning the garlic excessively because burned garlic can make the broth bitter.
Step 4: Build the Tomato Base 🍅
Add:
- 1 can diced tomatoes
- 1 can tomato sauce
- 1 teaspoon ground cumin
- 1 teaspoon Mexican oregano
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
Stir thoroughly.
Cook the tomato mixture for approximately 2–3 minutes.
This gives the spices a chance to bloom and helps deepen the tomato flavor before the broth is added.
Step 5: Add the Beef and Potatoes
Return the browned ground beef to the pot.
Add the diced potatoes.
Stir until the beef and potatoes are coated with the seasoned tomato mixture.
Step 6: Add the Beef Broth
Pour in 6 cups low-sodium beef broth.
Stir well, scraping the bottom of the pot to release any browned bits.
Those browned bits contain plenty of flavor.
Increase the heat and bring the soup to a gentle boil.
Step 7: Simmer the Potatoes 🥔
Reduce the heat to medium-low.
Cover partially and simmer for approximately 8–10 minutes.
At this point, the potatoes should be beginning to soften but shouldn’t yet be completely tender.
Starting the potatoes before the fideo helps ensure that both ingredients finish cooking at approximately the same time.
Step 8: Add the Toasted Fideo
Stir the toasted fideo noodles into the simmering soup.
Continue cooking for approximately 7–10 minutes, depending on the type and thickness of noodles you’re using.
Stir occasionally to prevent the noodles from sticking together.
Step 9: Add the Pinto Beans 🫘
When the noodles and potatoes are almost tender, stir in the drained and rinsed pinto beans.
Simmer for another 3–5 minutes, just long enough to heat the beans thoroughly and allow them to absorb some of the broth’s flavor.
Step 10: Check the Consistency
Fideo continues absorbing liquid as it cooks.
If the soup becomes thicker than you prefer, add another splash of beef broth or hot water.
For a more brothy sopa, you may want an additional 1–2 cups of broth, especially if the soup will sit before serving.
Step 11: Finish with Cilantro and Lime 🌿
Turn off the heat.
Stir in:
- 1/2 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
Taste the broth.
Add additional salt, black pepper, lime, or chile as needed.
Step 12: Serve
Ladle the hot soup into deep bowls.
Finish each serving with your favorite toppings, such as:
- Fresh cilantro
- Queso fresco
- Avocado
- Jalapeño
- Lime
- Mexican crema
Serve immediately with warm tortillas on the side.
