  • 1 lb ground beef
  • 1 cup sweet corn (canned or frozen)
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 cups milk
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rotini pasta according to package instructions until al dente, then drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add ground beef, seasoning with salt and pepper, cooking until it turns brown, about 5-7 minutes.
  4. Stir in sweet corn and ranch seasoning mix.
  5. In a mixing bowl, combine the cooked pasta, beef mixture, milk, and half of the cheddar cheese.
  6. Pour the mixture into a greased baking dish, spreading it evenly. Sprinkle the remaining cheddar cheese on top, along with breadcrumbs if using.
  7. Bake for 25-30 minutes, or until bubbly and golden brown.
  8. Serve hot and enjoy!
