- 8 oz rotini pasta
- 1 lb ground beef
- 1 cup sweet corn (canned or frozen)
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 2 cups milk
- Salt and pepper to taste
- 1 tbsp olive oil
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the rotini pasta according to package instructions until al dente, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add ground beef, seasoning with salt and pepper, cooking until it turns brown, about 5-7 minutes.
- Stir in sweet corn and ranch seasoning mix.
- In a mixing bowl, combine the cooked pasta, beef mixture, milk, and half of the cheddar cheese.
- Pour the mixture into a greased baking dish, spreading it evenly. Sprinkle the remaining cheddar cheese on top, along with breadcrumbs if using.
- Bake for 25-30 minutes, or until bubbly and golden brown.
- Serve hot and enjoy!
Notes
Consider adding chopped bell peppers or spinach for extra nutrition. This dish can be prepared ahead of time and refrigerated before baking.
