- 1 tablespoon lemon zest
- 1/2 cup granulated sugar (for lemon curd)
- 2 large eggs (for lemon curd)
- 4 tablespoons unsalted butter (for lemon curd)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, beating until smooth.
- Gradually mix in the all-purpose flour and salt until a soft dough forms.
- Chill the dough in the fridge for about 30 minutes.
- Scoop approximately 1 tablespoon of dough, roll into a ball, and roll in powdered sugar.
- Make an indentation in each cookie using your thumb.
- Bake for 12-14 minutes until edges are lightly golden.
- Prepare the lemon curd by whisking lemon juice, zest, sugar, and eggs in a saucepan over medium heat until thickened.
- Whisk in butter until curd is smooth, then spoon into the center of each cookie.
