Ingredients

  • 2/3 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup powdered sugar, for rolling
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup granulated sugar (for lemon curd)
  • 2 large eggs (for lemon curd)
  • 4 tablespoons unsalted butter (for lemon curd)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the egg and vanilla extract, beating until smooth.
  4. Gradually mix in the all-purpose flour and salt until a soft dough forms.
  5. Chill the dough in the fridge for about 30 minutes.
  6. Scoop approximately 1 tablespoon of dough, roll into a ball, and roll in powdered sugar.
  7. Make an indentation in each cookie using your thumb.
  8. Bake for 12-14 minutes until edges are lightly golden.
  9. Prepare the lemon curd by whisking lemon juice, zest, sugar, and eggs in a saucepan over medium heat until thickened.
  10. Whisk in butter until curd is smooth, then spoon into the center of each cookie.
