High-Protein Greek Yogurt Bagel Bread

You only need a handful of simple ingredients to make this easy bagel-inspired loaf.

  • 1 cup plain Greek yogurt — Adds moisture, tanginess, tenderness, and protein while helping create the dough.
  • 2 large eggs — Provide additional protein, richness, moisture, and structure.
  • 1½ cups self-rising flour — Forms the structure of the bread and already contains leavening.
  • 1 teaspoon baking powder — Provides additional lift.
  • ½ teaspoon salt — Enhances the flavor of the bread.
  • 1 tablespoon sesame seeds or everything bagel seasoning, optional — Gives the loaf a classic bagel-inspired finish.

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C).

Line a baking sheet or small loaf pan with parchment paper.

A small loaf pan will give you a more traditional loaf shape, while a baking sheet allows you to form the dough into a rustic free-form loaf.

Step 2: Combine the Greek Yogurt and Eggs

Add 1 cup plain Greek yogurt and 2 large eggs to a large mixing bowl.

Whisk until the mixture is smooth and evenly combined.

Breaking up any thick pockets of yogurt now makes it easier to incorporate the flour evenly.

Step 3: Add the Dry Ingredients

Add:

  • 1½ cups self-rising flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Stir gently until a soft, slightly sticky dough forms.

Avoid excessive mixing. Once the flour has been incorporated and there are no large dry pockets remaining, stop stirring.

Step 4: Shape the Loaf

Transfer the dough to your prepared pan or parchment-lined baking sheet.

Using lightly dampened or floured hands if necessary, gently shape the dough into a compact loaf.

Try to create an even shape so the bread bakes consistently from edge to center.

Step 5: Add the Bagel-Style Topping

Sprinkle the top with 1 tablespoon sesame seeds or everything bagel seasoning if desired.

Gently press the seasoning into the surface so it adheres better during baking.

Step 6: Bake

Transfer the loaf to your preheated oven.

Bake for approximately 25–30 minutes, or until the surface is golden and the center is cooked through.

Because ovens and loaf shapes vary, begin checking around the 25-minute mark.

If you’re uncertain whether the center is done, insert a toothpick or thin skewer into the thickest part. It should come out without wet, uncooked dough attached.

Step 7: Cool

Remove the bread from the oven and let it rest for approximately 10 minutes.

Then transfer it to a wire rack.

Allow the loaf to cool completely before slicing for the cleanest texture.

Step 8: Slice and Toast

Use a sharp serrated knife to cut the cooled loaf into approximately 8 slices.

For the best bagel-inspired experience, toast the slices before serving.
