Instructions
Preheat your oven to 375°F (190°C).
Line a small loaf pan with parchment paper, leaving enough overhang to help lift the bread out after baking. You can also shape the dough into a compact loaf on a parchment-lined baking sheet.
Add the cottage cheese and eggs to a blender or food processor.
Blend until completely smooth and creamy. This step breaks down the cottage cheese curds so they distribute evenly throughout the dough rather than leaving noticeable pockets.
Pour the blended cottage cheese mixture into a large mixing bowl.
Add the self-rising flour, shredded mozzarella, Parmesan, minced garlic, Italian seasoning, baking powder, and salt.
Stir gently until everything comes together into a thick, soft dough.
The dough may be slightly sticky, which is normal. Avoid excessive mixing once the flour has been incorporated because overworking the dough can make the finished loaf denser.
Transfer the dough to your prepared loaf pan or baking sheet.
Use a spatula or slightly damp hands to shape it into a compact, even loaf.
If using everything bagel seasoning, sprinkle the tablespoon evenly over the top and gently press it into the surface so it adheres.
Bake at 375°F (190°C) for 25–30 minutes, or until the exterior is golden and the center feels firm and cooked through.
Because ovens and loaf-pan dimensions vary, begin checking near the 25-minute mark.
Allow the bread to cool in the pan for about 10 minutes.
Then carefully transfer it to a wire rack.
Giving the loaf time to cool helps the interior set and makes cleaner slicing easier.
Use a serrated bread knife to cut the loaf into approximately 8 slices.
Serve warm, or toast individual slices for a firmer exterior and even more pronounced garlic-and-cheese flavor.
