Description

Ingredients

  • 2 medium zucchinis, diced
  • 2 ears of corn, husked and kernels removed
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons agave syrup
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Toss the zucchini and corn in olive oil, salt, and pepper.
  3. Grill the zucchini and corn for about 5-7 minutes until tender and slightly charred.
  4. Combine the grilled veggies, red bell pepper, red onion, and cilantro in a large bowl.
  5. Whisk together the lime juice and agave syrup in a small bowl.
  6. Pour the dressing over the salad and toss to combine.
