Description

A delightful cake layered with fresh berries and lemon mousse, perfect for celebrations.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup lemon mousse
  • 2 cups fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract until combined.
  5. Sift together the flour, baking powder, and salt in another bowl.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  9. Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks.
  10. Spread lemon mousse on top of one cake layer, and add fresh berries.
  11. Top with the second cake layer and serve with additional berries.

Notes

Store leftover cake covered in the fridge for up to 3-4 days or freeze individual slices for up to 2 months.
