- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 large eggs
- 2 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup lemon mousse
- 2 cups fresh berries (strawberries, blueberries, raspberries)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract until combined.
- Sift together the flour, baking powder, and salt in another bowl.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks.
- Spread lemon mousse on top of one cake layer, and add fresh berries.
- Top with the second cake layer and serve with additional berries.
Notes
Store leftover cake covered in the fridge for up to 3-4 days or freeze individual slices for up to 2 months.
