Ingredients

  • 2 cups cooked rice
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ginger powder
  • 1/2 cup bell peppers, sliced
  • 1/2 cup broccoli florets
  • 1/4 cup green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. Heat the oil in a large pan or wok over medium heat until it shimmers.
  2. Cook the diced chicken in the hot oil until golden brown and no longer pink, about 5-7 minutes.
  3. Prepare the sauce by whisking together soy sauce, rice vinegar, chili paste, honey, garlic powder, and ginger powder in a mixing bowl.
  4. Combine the prepared sauce with the cooked chicken and let it simmer for about 5 minutes.
  5. Add the bell peppers and broccoli, cooking for an additional 3-5 minutes until the veggies are tender yet crunchy.
  6. Serve the stir fry over a bed of warm rice, garnished with green onions and sesame seeds.
