Ingredients
For the Focaccia
- 400 g (about 3 1/4 cups) all-purpose flour
- 360 g (1 1/2 cups) lukewarm water
- 7 g (2 1/4 tsp) instant yeast
- 8 g salt
- 1 tsp honey
- 4 tbsp extra-virgin olive oil, divided
- 1 tbsp unsalted butter, for the pan
- 3 garlic cloves, finely minced
- 1 tbsp fresh rosemary, finely chopped
- 1 tbsp fresh parsley, finely chopped
- 1 tsp dried Italian seasoning
- Flaky sea salt, for topping
Instructions
Add the all-purpose flour, instant yeast, and salt to a large mixing bowl.
Whisk until evenly combined.
Distributing the yeast and salt through the flour before adding the liquid helps create an evenly mixed dough.
Step 2: Add the Water and Honey
Pour in the lukewarm water and add the honey.
Using a wooden spoon or sturdy spatula, stir until all the flour is hydrated and a very wet, sticky dough forms.
Don’t add extra flour simply because the dough looks wetter than traditional bread dough. Focaccia dough is supposed to be soft and sticky.
There is no need to knead.
Step 3: Coat the Dough With Olive Oil
Drizzle 2 tablespoons of extra-virgin olive oil over the dough.
Gently turn the dough a few times so the surface becomes lightly coated.
The oil helps keep the dough from drying out during its first rise.
Step 4: Let the Dough Rise
Cover the bowl with plastic wrap or a clean kitchen towel.
Place it in a warm, draft-free location and let it rise for approximately 2 1/2 to 3 1/2 hours.
The exact time will depend on the temperature of your kitchen.
Rather than relying only on the clock, look at the dough. It should become very puffy, bubbly, and noticeably expanded.
