Ingredients
For the Bread
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 2 1/4 tsp instant yeast
- 1 1/2 tsp salt
- 1 1/2 cups warm water
- 2 tbsp honey
- 2 tbsp olive oil or melted butter
- 1 tbsp rolled oats, for topping
Instructions
Add the whole wheat flour, all-purpose flour, 1/2 cup rolled oats, instant yeast, and salt to a large mixing bowl.
Stir everything together until evenly combined.
Because instant yeast is being used, there’s no need to activate it separately before adding it to the flour.
Step 2: Add the Wet Ingredients
Pour in the warm water, honey, and olive oil or melted butter.
Use a wooden spoon or sturdy spatula to stir everything together.
Continue mixing until there are no visible pockets of dry flour.
Step 3: Form the No-Knead Dough
The mixture should come together into a sticky, shaggy dough.
Don’t worry if it doesn’t resemble a smooth traditional bread dough. That sticky texture is expected with this no-knead method.
Avoid adding unnecessary flour simply to make the dough easier to handle.
Step 4: Let the Dough Rise
Cover the mixing bowl tightly.
Let the dough rise at room temperature for approximately 1 1/2 to 2 hours, or until it looks noticeably puffy and has nearly doubled in size.
The exact time will depend on the temperature of your kitchen.
Rather than relying exclusively on the clock, look for a significant increase in volume.
Step 5: Prepare the Loaf Pan
Lightly grease a 9×5-inch loaf pan.
Transfer the risen dough directly into the prepared pan.
Because the dough is sticky, lightly wet or oil your hands before touching it.
Step 6: Shape the Dough in the Pan
Gently spread the dough into an even layer inside the loaf pan.
You don’t need to knead or aggressively shape it.
Simply smooth and distribute the dough so the loaf will bake relatively evenly.
Step 7: Let the Dough Rise Again
Cover the loaf pan loosely.
Allow the dough to rise for another 30 to 45 minutes, until it becomes puffy and rises close to the top of the pan.
Don’t rush this second rise. It helps create a lighter finished loaf.
Step 8: Preheat the Oven
While the dough completes its second rise, preheat your oven to 375°F (190°C).
Give the oven enough time to become fully heated before baking.
Step 9: Add the Oat Topping
Lightly brush the surface of the risen dough with a little water.
Sprinkle 1 tablespoon rolled oats evenly over the top.
The moisture helps the oats adhere to the loaf during baking.
Step 10: Bake the Bread
Bake the loaf for approximately 35 to 40 minutes.
The finished bread should have a nicely golden exterior and sound hollow when gently tapped.
Step 11: Cool in the Pan
Remove the bread from the oven and let it rest in the loaf pan for approximately 10 minutes.
This short cooling period makes the loaf easier to remove without damaging it.
Step 12: Cool Completely
Carefully remove the bread from the pan and transfer it to a wire rack.
Allow it to cool completely before slicing.
This is particularly important with whole wheat bread. Cutting the loaf while it’s still very hot can compress the crumb and make the interior seem gummy.
Step 13: Slice and Serve
Once completely cooled, use a serrated bread knife to cut the loaf into slices.
Serve with butter, honey, peanut butter, eggs, avocado, or your favorite sandwich fillings.
