Description

A flavorful and comforting dish featuring tender chicken, mixed vegetables, and silky lo mein noodles in a savory sauce.

Ingredients

Scale
  • 8 oz lo mein noodles (or spaghetti/udon)
  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Cook the lo mein noodles: Bring a pot of salted water to a boil, then add the noodles. Follow package instructions until al dente, then drain and set aside.
  2. Sauté garlic and ginger: In a large skillet, heat the sesame oil over medium-high heat. Add minced garlic and grated ginger, sautéing until fragrant—about 30 seconds.
  3. Brown the chicken: Add the sliced chicken to the skillet. Cook until golden brown and fully cooked through, around 5-7 minutes.
  4. Mix in the vegetables: Toss in the mixed vegetables, cooking until they are tender but still crisp, about 3-4 minutes.
  5. Create the sauce: Pour in the soy sauce and oyster sauce, mixing well to combine all ingredients.
  6. Add the noodles: Fold in the cooked noodles, ensuring that each strand is coated in the savory sauce.
  7. Season to taste: Add salt and pepper according to your preference.
  8. Garnish and serve: Spoon the lo mein into bowls, garnishing generously with green onions.
