  • 1 cup oat flour — Adds structure and a hearty, wholesome texture.
  • ½ cup almond flour — Adds richness and a tender crumb.
  • 1 tsp baking powder — Helps the loaf rise and stay light.
  • ½ tsp baking soda — Works alongside the baking powder for lift.

  • 1 tbsp chopped fresh parsley — Adds a fresh, herbal finish.
  • ¼ tsp Italian seasoning — Reinforces the savory flavor on top.

Instructions

This recipe comes together in a series of simple steps. Here’s exactly how to make it.

Step 1: Prepare the Oven Preheat the oven to 350°F (175°C). Line an 8×4-inch loaf pan with parchment paper, leaving some overhang for easy removal.

Step 2: Blend the Wet Ingredients Add the chickpeas, eggs, Greek yogurt, olive oil, and lemon juice to a high-speed blender. Blend until very smooth and creamy, scraping down the sides as needed.

Step 3: Add the Dry Ingredients Add the oat flour, almond flour, baking powder, baking soda, garlic powder, onion powder, Italian seasoning, black pepper, and salt.

Step 4: Blend Briefly Pulse just until the ingredients are fully combined and a thick, smooth batter forms. Avoid over-blending once the flour is incorporated.

Step 5: Transfer to the Pan Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 6: Add the Topping Sprinkle with sesame seeds, optional pumpkin or sunflower seeds, parsley, and Italian seasoning.

Step 7: Bake Bake for 35–45 minutes, or until the loaf is golden on top and a toothpick inserted into the center comes out mostly clean.

Step 8: Cool Let the bread cool in the pan for about 10 minutes, then carefully lift it out using the parchment. Transfer to a wire rack and allow it to cool completely before slicing.

Step 9: Slice and Serve Use a serrated knife to cut the cooled loaf into slices. Toast lightly for an extra golden edge and crisp texture.
