- 2 cups plain Greek yogurt
- 2 large eggs
- 2 cups self-rising flour
Optional Seasonings
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon black pepper
- 2 tablespoons grated Parmesan
- 1 tablespoon chopped fresh herbs
Instructions
- Preheat the oven to 350°F (175°C).
- Lightly grease an 8×4-inch loaf pan or line it with parchment paper.
- Add the Greek yogurt and eggs to a large mixing bowl.
- Whisk until smooth and completely combined.
- Gradually add the self-rising flour.
- Use a spatula or wooden spoon to mix just until the flour is incorporated. The batter should be thick and sticky.
- If using optional seasonings, gently fold them into the batter.
- Spoon the batter into the prepared loaf pan and smooth the surface with a spatula or slightly damp hands.
- Bake for 40–50 minutes, or until the top is lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
- If the surface begins browning too quickly, loosely cover the loaf with foil during approximately the final 10 minutes.
- Remove from the oven and allow the bread to cool in the pan for 10–15 minutes.
- Transfer to a wire rack and cool completely before slicing.
- Cut into 8–10 slices and serve fresh or toasted with your favorite toppings.
