Place the dry red lentils in a large bowl. Cover generously with water and let them soak for at least 4 hours, or preferably overnight. Drain the lentils thoroughly and rinse them well.
Add the soaked and drained lentils, water, eggs, olive oil, baking powder, baking soda, apple cider vinegar, salt, and optional garlic and onion powder to a high-speed blender. Blend until very smooth and creamy. The batter should resemble a thick pancake batter.
Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper and lightly grease it with olive oil. Pour the lentil batter into the prepared pan. Smooth the top with a spatula.
