Description

Ingredients

  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter (softened)
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder (for frosting)
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round pans.
  2. Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  3. Add the eggs, milk, oil, and vanilla extract to the dry mix.
  4. Blend on medium speed for about two minutes until smooth.
  5. Stir in the boiling water. The batter will be thin.
  6. Divide the batter between the prepared cake pans.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes, then invert onto a cooling rack.
  9. Beat softened butter until creamy for the frosting.
  10. Add powdered sugar and cocoa, then mix until combined.
  11. Pour in heavy cream and vanilla, and beat until fluffy.
  12. Frost the top of one cake layer, place the second layer on top, then frost the entire cake.
  13. Slice and enjoy!
