- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda

- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter (softened)
- 3 1/2 cups powdered sugar
- 1/2 cup unsweetened cocoa powder (for frosting)
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round pans.
- Whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large mixing bowl.
- Add the eggs, milk, oil, and vanilla extract to the dry mix.
- Blend on medium speed for about two minutes until smooth.
- Stir in the boiling water. The batter will be thin.
- Divide the batter between the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Cool the cakes in the pans for 10 minutes, then invert onto a cooling rack.
- Beat softened butter until creamy for the frosting.
- Add powdered sugar and cocoa, then mix until combined.
- Pour in heavy cream and vanilla, and beat until fluffy.
- Frost the top of one cake layer, place the second layer on top, then frost the entire cake.
- Slice and enjoy!
