Crispy Taco Cups
- 8 small flour tortillas, approximately 5–6 inches across
- 1 tablespoon olive oil
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
Beef and Bacon Filling
- 1 lb lean ground beef
- 8 slices bacon, cooked crisp and crumbled
- 1½ cups shredded sharp cheddar cheese, divided
- ½ small yellow onion, finely diced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon yellow mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
Creamy Burger Sauce
- ½ cup mayonnaise
- 2 tablespoons finely chopped dill pickles
- 1 tablespoon yellow mustard
- 1 tablespoon ketchup
- 1 teaspoon white vinegar
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Pickle Crunch Topping
- 1 cup finely chopped dill pickles, patted dry
- ½ cup shredded iceberg lettuce
- 2 tablespoons finely diced white onion
- 2 tablespoons sesame seeds, optional
- Reserved bacon from the filling quantity, or extra cooked bacon, optional
Instructions
- Preheat the oven to 375°F. Brush tortillas with oil, season, and press into jumbo muffin wells. Bake 8–10 minutes until beginning to crisp.
- If starting with raw bacon, cook until crisp according to package directions, drain, and crumble. Remove most rendered fat from the skillet.
- Cook beef and yellow onion for about 6–8 minutes, until the beef reaches 160°F. Drain excess fat. Stir in Worcestershire, mustard, and filling spices; cook 1 minute and adjust seasoning.
- Remove from heat. Fold in bacon, reserving some if desired, and ½ cup cheddar.
- Combine sauce ingredients and refrigerate until serving.
- Divide hot filling among shells and top with the remaining cup cheddar. Bake 5–8 minutes until melted and the edges are crisp.
- Rest 2 minutes, lift out, and add dry pickles, lettuce, white onion, optional seeds, a drizzle of sauce, and reserved bacon. Serve promptly.
