A tropical delight, this Creamy Pineapple Coconut Ice Cream blends the sweetness of fresh pineapple with creamy coconut for a refreshing treat.


Ingredients

  • 2 cups Fresh Pineapple Chunks
  • 1 cup Coconut Milk
  • 1 cup Heavy Cream
  • 3/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 pinch Salt
  • 1/2 cup Shredded Coconut

Instructions

  1. Blend the pineapple chunks in a blender or food processor until smooth.
  2. Mix the coconut milk, heavy cream, granulated sugar, vanilla extract, and salt in a mixing bowl until smooth.
  3. Combine the blended pineapple with the creamy mixture and stir gently.
  4. Chill the mixture in the refrigerator for at least one hour.
  5. Churn in an ice cream maker according to the manufacturer’s instructions, or freeze and stir every 30 minutes until creamy.
  6. Add the shredded coconut and fold in gently.
  7. Freeze again in an airtight container for 2-4 hours until firm.
