A tropical delight, this Creamy Pineapple Coconut Ice Cream blends the sweetness of fresh pineapple with creamy coconut for a refreshing treat.

- 2 cups Fresh Pineapple Chunks
- 1 cup Coconut Milk
- 1 cup Heavy Cream
- 3/4 cup Granulated Sugar
- 1 teaspoon Vanilla Extract
- 1 pinch Salt
- 1/2 cup Shredded Coconut
Instructions
- Blend the pineapple chunks in a blender or food processor until smooth.
- Mix the coconut milk, heavy cream, granulated sugar, vanilla extract, and salt in a mixing bowl until smooth.
- Combine the blended pineapple with the creamy mixture and stir gently.
- Chill the mixture in the refrigerator for at least one hour.
- Churn in an ice cream maker according to the manufacturer’s instructions, or freeze and stir every 30 minutes until creamy.
- Add the shredded coconut and fold in gently.
- Freeze again in an airtight container for 2-4 hours until firm.
Notes
For an adult version, add a splash of rum or try incorporating diced mango for extra tropical flavors.
