- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup dried cranberries
- 1 tablespoon orange zest
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in the dried cranberries and orange zest.
- Whisk together the cream, egg, and vanilla extract in a separate bowl.
- Add the wet ingredients to the dry mixture and mix until just combined.
- Turn the dough onto a floured surface and knead gently.
- Pat the dough into a circle about 1-inch thick and cut into wedges or rounds.
- Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
- Allow to cool slightly before serving.
Notes
For a golden finish, brush the tops with a little extra cream before baking. You can also substitute cranberries with blueberries or raisins.
