Deliciously fluffy scones bursting with tart cranberries and bright orange zest, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup dried cranberries
  • 1 tablespoon orange zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in the dried cranberries and orange zest.
  5. Whisk together the cream, egg, and vanilla extract in a separate bowl.
  6. Add the wet ingredients to the dry mixture and mix until just combined.
  7. Turn the dough onto a floured surface and knead gently.
  8. Pat the dough into a circle about 1-inch thick and cut into wedges or rounds.
  9. Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  10. Allow to cool slightly before serving.

Notes

For a golden finish, brush the tops with a little extra cream before baking. You can also substitute cranberries with blueberries or raisins.
