Ingredients

  • 1/2 cup coconut oil, melted
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup whipped topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking pan thoroughly.
  2. Combine flour, sugar, cocoa powder, baking powder, and salt in a large bowl.
  3. Add melted coconut oil, almond milk, and vanilla extract to the dry mixture.
  4. Stir until well combined to create a smooth batter.
  5. Fold in shredded coconut carefully.
  6. Pour the brownie batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Allow brownies to cool completely in the pan.
  9. Spread whipped topping over the cooled brownies and sprinkle with additional shredded coconut.
