- 2 cups chicken broth
- 1 lb chicken breast, diced
- 1 can black beans, drained and rinsed
- 1 cup sweet corn
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat about 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add the diced chicken, seasoning with salt and pepper. Cook until golden brown, about 5-7 minutes.
- Add 1 cup of rice to the pan, stirring to coat each grain with the oil.
- Pour in 2 cups of chicken broth and bring to a gentle simmer.
- Stir in the black beans, sweet corn, and diced red bell pepper. Cover and cook for approximately 10 minutes or until the rice is tender and the liquid is absorbed.
- Remove from heat, squeeze in the lime juice, and sprinkle with chopped cilantro. Stir well.
