Ingredients

  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 can black beans, drained and rinsed
  • 1 cup sweet corn
  • 1 red bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat about 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add the diced chicken, seasoning with salt and pepper. Cook until golden brown, about 5-7 minutes.
  2. Add 1 cup of rice to the pan, stirring to coat each grain with the oil.
  3. Pour in 2 cups of chicken broth and bring to a gentle simmer.
  4. Stir in the black beans, sweet corn, and diced red bell pepper. Cover and cook for approximately 10 minutes or until the rice is tender and the liquid is absorbed.
  5. Remove from heat, squeeze in the lime juice, and sprinkle with chopped cilantro. Stir well.
