- 5 small to medium potatoes, peeled and cubed
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 1 can of chili
- 1 cup shredded cheese (cheddar or your choice)
- Optional toppings: sour cream and green onions
Instructions
- Heat the oil: In your large skillet, pour a generous amount of olive oil and bring it over medium heat.
- Cook the potatoes: Toss in the cubed potatoes and season with salt and black pepper. Let them cook undisturbed until golden, about 15-20 minutes.
- Add chili: Stir in the can of chili and allow it to heat through.
- Melt the cheese: Sprinkle the cheese over the top and cover the skillet to melt the cheese.
- Serve: Dish it up hot, adding optional toppings as desired.
Notes
For extra crunch, soak the cubed potatoes in cold water for 30 minutes before cooking. Customize by adding different toppings or using sweet potatoes.
