Ingredients

- 1 cup sweet potato, cooked and mashed
- 1 egg
- 1/2 cup Greek yogurt
- 1/2 cup whole wheat flour
- 1/4 cup chicken broth (low sodium)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the mashed sweet potato, egg, and Greek yogurt in a bowl until well combined.
- Add in the whole wheat flour and chicken broth gradually, stirring until a dough forms.
- Grease mini muffin molds and scoop the dough into the molds, filling each about 3/4 full.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool before serving.
Notes
Ensure sweet potato is cooked. Can substitute ingredients based on dietary needs.
