- 4 cups mixed salad greens (arugula, spinach, romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 bell pepper, sliced
- 1/4 cup fresh parsley, chopped
- 1/2 cup Greek yogurt
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste

Instructions
- Whip up the dressing: Combine Greek yogurt, tahini, lemon juice, garlic powder, paprika, salt, and pepper in a small bowl. Whisk until smooth.
- Toss the salad: In a large mixing bowl, layer mixed salad greens, cherry tomatoes, cucumber, red onion, and bell pepper.
- Build your dish: Top the salad with the shredded chicken.
- Dress it up: Drizzle olive oil and pour the yogurt sauce over the salad.
- Garnish with parsley.
