- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 2 tsp dried thyme
- 2 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and celery. Sauté for about 5-7 minutes.
- Stir in the minced garlic and sauté for another minute.
- Add the diced chicken to the pot, cooking until there’s no pink remaining, about 5-6 minutes.
- Pour in the chicken broth and stir to combine. Bring to a gentle simmer.
- Incorporate the heavy cream, thyme, rosemary, salt, and pepper. Adjust seasonings to taste.
- Mix in the frozen peas and let the soup simmer for an additional 10 minutes.
- Serve hot, garnished with fresh parsley if desired.
Notes
For a richer flavor, let the soup enhance overnight in the fridge before serving. The soup can also be made using an Instant Pot for quicker cooking.
