Description

Ingredients

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion, diced carrots, and celery. Sauté for about 5-7 minutes.
  2. Stir in the minced garlic and sauté for another minute.
  3. Add the diced chicken to the pot, cooking until there’s no pink remaining, about 5-6 minutes.
  4. Pour in the chicken broth and stir to combine. Bring to a gentle simmer.
  5. Incorporate the heavy cream, thyme, rosemary, salt, and pepper. Adjust seasonings to taste.
  6. Mix in the frozen peas and let the soup simmer for an additional 10 minutes.
  7. Serve hot, garnished with fresh parsley if desired.

Notes

For a richer flavor, let the soup enhance overnight in the fridge before serving. The soup can also be made using an Instant Pot for quicker cooking.
