Description

Ingredients

  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup capers
  • 1/2 cup chicken broth
  • Juice of 1 lemon
  • 2 tablespoons butter

Instructions

  1. Combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and pepper in a large mixing bowl. Mix until well combined and form into meatballs.
  2. Heat olive oil in a skillet over medium heat, then gently add the meatballs, cooking for about 5-7 minutes until golden brown.
  3. Remove the meatballs and set aside on a plate.
  4. Add capers, chicken broth, and lemon juice to the skillet, scraping the bottom to release browned bits. Bring to a simmer.
  5. Return the meatballs to the skillet, cover, and simmer for an additional 10-15 minutes until cooked through.
  6. Stir in the butter until melted before serving, spooning sauce over meatballs.
