- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup capers
- 1/2 cup chicken broth
- Juice of 1 lemon
- 2 tablespoons butter
Instructions
- Combine the ground chicken, breadcrumbs, Parmesan cheese, egg, minced garlic, chopped parsley, salt, and pepper in a large mixing bowl. Mix until well combined and form into meatballs.
- Heat olive oil in a skillet over medium heat, then gently add the meatballs, cooking for about 5-7 minutes until golden brown.
- Remove the meatballs and set aside on a plate.
- Add capers, chicken broth, and lemon juice to the skillet, scraping the bottom to release browned bits. Bring to a simmer.
- Return the meatballs to the skillet, cover, and simmer for an additional 10-15 minutes until cooked through.
- Stir in the butter until melted before serving, spooning sauce over meatballs.
Notes
For a lighter option, consider cooking these meatballs in an air fryer or baking them.
