Description

A comforting dish of succulent chicken breasts in a creamy spinach sauce, served over pasta.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked pasta (spaghetti or fettuccine)

Instructions

  1. Heat the olive oil in a large skillet over medium heat until shimmering.
  2. Cook the chicken breasts for 6-7 minutes on each side until golden brown, then remove from the skillet.
  3. Sauté the minced garlic in the same skillet for about 30 seconds.
  4. Add the fresh spinach and cook until wilted.
  5. Incorporate the heavy cream and bring to a gentle simmer.
  6. Add the grated Parmesan cheese, stirring until melted.
  7. Return the sliced chicken to the skillet, coating in the creamy sauce.
  8. Serve over cooked pasta and garnish with extra Parmesan, if desired.

Notes

For a lighter version, use a vegan cream alternative or make a broth-based sauce. Customize with sun-dried tomatoes or artichoke hearts.
