Instructions
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Cook the chicken breasts for 6-7 minutes on each side until golden brown, then remove from the skillet.
- Sauté the minced garlic in the same skillet for about 30 seconds.
- Add the fresh spinach and cook until wilted.
- Incorporate the heavy cream and bring to a gentle simmer.
- Add the grated Parmesan cheese, stirring until melted.
- Return the sliced chicken to the skillet, coating in the creamy sauce.
- Serve over cooked pasta and garnish with extra Parmesan, if desired.
Notes
For a lighter version, use a vegan cream alternative or make a broth-based sauce. Customize with sun-dried tomatoes or artichoke hearts.
