Description

Ingredients

  • 2 chicken breasts, sliced
  • 200g noodles (your choice of egg, rice, or whole grain)
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, or snap peas)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the noodles according to package instructions. Drain and set aside.
  2. In a large pan or wok, heat the sesame oil over medium-high heat until shimmering.
  3. Add the sliced chicken, cooking until browned and fully cooked through, about 5-7 minutes.
  4. Toss in the minced garlic and ginger, sautéing for an additional minute.
  5. Next, add your mixed vegetables and stir-fry for 3-4 minutes until vibrant and tender-crisp.
  6. Pour in the soy sauce and oyster sauce, coating everything nicely.
  7. Gently add the cooked noodles, tossing until heated through and combined, about 2 more minutes.
  8. Finally, taste and season with salt and pepper as desired. Serve immediately.

Notes

Prep the chicken and veggies ahead of time for a quicker cooking process. Don’t overcrowd the pan to maintain the desired texture of the vegetables.
