- 200g noodles (your choice of egg, rice, or whole grain)
- 2 cups mixed vegetables (bell peppers, carrots, broccoli, or snap peas)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
Instructions
- Begin by cooking the noodles according to package instructions. Drain and set aside.
- In a large pan or wok, heat the sesame oil over medium-high heat until shimmering.
- Add the sliced chicken, cooking until browned and fully cooked through, about 5-7 minutes.
- Toss in the minced garlic and ginger, sautéing for an additional minute.
- Next, add your mixed vegetables and stir-fry for 3-4 minutes until vibrant and tender-crisp.
- Pour in the soy sauce and oyster sauce, coating everything nicely.
- Gently add the cooked noodles, tossing until heated through and combined, about 2 more minutes.
- Finally, taste and season with salt and pepper as desired. Serve immediately.
Notes
Prep the chicken and veggies ahead of time for a quicker cooking process. Don’t overcrowd the pan to maintain the desired texture of the vegetables.
