Instructions
- Preheat your oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, salt, and pepper in a large mixing bowl.
- Spread the seasoned potatoes on a baking sheet in a single layer.
- Bake for 25-30 minutes or until golden and crispy, stirring halfway through.
- Remove from the oven and sprinkle cheese and bacon over the top.
- Return to the oven for an additional 5 minutes to melt the cheese.
